Description

A hearty and comforting lasagna layered with fresh vegetables and a rich tomato sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. Heat olive oil in a pan over medium heat, add garlic, zucchini, bell pepper, and spinach, and sauté until softened.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles on top of the sauce, followed by ricotta cheese, sautéed vegetables, mozzarella cheese, and more marinara sauce.
  6. Repeat the layers two more times, finishing with a layer of noodles and marinara sauce on top.
  7. Sprinkle with parmesan cheese.
  8. Bake for 45 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

Feel free to add or substitute any vegetables you like. Serve with garlic bread for a complete meal.
