A hearty and comforting lasagna layered with fresh vegetables and a rich tomato sauce.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 1 zucchini, sliced
- 1 bell pepper, diced
- 3 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- Heat olive oil in a pan over medium heat, add garlic, zucchini, bell pepper, and spinach, and sauté until softened.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles on top of the sauce, followed by ricotta cheese, sautéed vegetables, mozzarella cheese, and more marinara sauce.
- Repeat the layers two more times, finishing with a layer of noodles and marinara sauce on top.
- Sprinkle with parmesan cheese.
- Bake for 45 minutes, or until the cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
Feel free to add or substitute any vegetables you like. Serve with garlic bread for a complete meal.
