Ingredients
1 lb ground beef or lamb
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
2 tbsp red onion, finely chopped
1 tbsp fresh parsley, chopped
1 tbsp fresh dill or oregano, chopped
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil (for cooking)
2 cups cooked rice or quinoa
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/2 cup crumbled feta cheese
1/4 cup Kalamata olives, sliced
1/2 cup tzatziki sauce
Lemon wedges for serving
Instructions
1. In a large bowl, combine ground meat, breadcrumbs, egg, garlic, onion, herbs, salt, and pepper. Mix until just combined.
2. Form into small meatballs, about 1 inch in diameter.
3. Heat olive oil in a large skillet over medium heat and cook meatballs for 8–10 minutes, turning occasionally, until browned and cooked through.
4. While meatballs cook, prepare the bowl ingredients: cook rice or quinoa, chop vegetables, and crumble feta.
5. Assemble bowls by layering rice or quinoa on the bottom, then top with meatballs, cucumber, tomatoes, onion, olives, and feta.
6. Drizzle with tzatziki sauce and a squeeze of lemon juice.
7. Serve immediately and enjoy!

Use ground turkey or chicken for a lighter option.
