Description
A warm and comforting soup that combines Thai coconut curry flavors with tender dumplings creamy, aromatic, and perfect for cozy nights.
Ingredients
1 tbsp vegetable oil
1 small onion, diced
2 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp red curry paste
4 cups chicken or vegetable broth
1 can (14 oz) coconut milk
1 tbsp fish sauce (optional)
1 tbsp soy sauce
1 tsp brown sugar
1 cup sliced mushrooms
1 cup shredded carrots
1 red bell pepper, sliced
1 cup baby spinach
1 package frozen dumplings (about 12–15)
Juice of 1 lime
Fresh cilantro and sliced green onions for garnish
Instructions
1. In a large pot, heat vegetable oil over medium heat.
2. Add onion, garlic, and ginger; sauté until fragrant and softened.
3. Stir in red curry paste and cook for 1 minute to release flavor.
4. Pour in broth and coconut milk, stirring to combine.
5. Add fish sauce, soy sauce, and brown sugar; bring to a gentle simmer.
6. Add mushrooms, carrots, and bell pepper; cook until tender, about 5–7 minutes.
7. Carefully add the dumplings to the simmering soup and cook according to package instructions (usually 5–7 minutes) until tender.
8. Stir in baby spinach and lime juice just before serving.
9. Ladle into bowls and top with cilantro and green onions.
Notes
Use shrimp, chicken, or vegetable dumplings depending on your preference.
For extra heat, add Thai chili flakes or a drizzle of chili oil before serving.
This soup pairs beautifully with jasmine rice or rice noodles.
