This bold and cheesy Texas Tamale Pie Casserole is the ultimate comfort food. Packed with seasoned ground beef, black beans, tomatoes, and a golden cornmeal crust—it’s a Tex-Mex-inspired favorite for weeknight dinners.
Ingredients
1 lb ground beef
1 medium onion, diced
1 tsp garlic powder
1 tbsp chili powder
1 tsp cumin
1/2 tsp black pepper
1 tsp salt
1 can black beans, drained
1 can tomatoes with green chilies
1/2 cup black olives, sliced
1/4 cup fresh cilantro, chopped
1 cup cheddar cheese, shredded
1 cup cornmeal
1 cup milk
1 large egg
Instructions
1. Preheat oven to 375°F. Grease a 9×13” baking dish.
2. Brown ground beef with diced onion in a skillet until fully cooked.
3. Add garlic powder, chili powder, cumin, black pepper, and salt to beef. Stir to combine.
4. Stir in black beans, tomatoes with green chilies, olives, and chopped cilantro. Simmer for 5 minutes.
5. Pour the beef mixture into the prepared baking dish and top with shredded cheddar cheese.
6. In a bowl, whisk together cornmeal, milk, and egg. Pour over the beef and cheese layer evenly.
7. Bake uncovered for 30–35 minutes until the top is golden and the edges are bubbly.
8. Remove from oven and let rest for 10 minutes before serving.
Notes
You can substitute ground turkey or plant-based crumbles for the beef.
For extra heat, add diced jalapeños or a dash of cayenne to the meat mixture.
Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
