  • 1 lb chicken breast, diced
  • 1 cup cooked rice
  • 1 cup pineapple chunks
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat, then add diced chicken and cook until golden brown (5-7 minutes).
  4. Stir in cooked rice, pineapple chunks, and teriyaki sauce; cook for another 2-3 minutes.
  5. Fill each bell pepper with the chicken and rice mixture.
