Description

A delightful baked vegetable lasagna packed with flavor and perfect for a vegetarian meal.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set aside.
  3. Heat olive oil in a pan over medium heat, sauté garlic, zucchini, and bell pepper until tender.
  4. Mix ricotta cheese with chopped spinach in a bowl.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, sautéed vegetables, and a layer of mozzarella.
  7. Repeat the layers ending with noodles topped with marinara sauce and mozzarella cheese.
  8. Sprinkle parmesan cheese on top.
  9. Bake in the oven for 30 minutes until cheese is bubbly.
  10. Let cool for a few minutes before slicing and serving.

Notes

Feel free to add any additional vegetables you like or substitute cheeses as per your preference.
