A delightful baked vegetable lasagna packed with flavor and perfect for a vegetarian meal.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions and set aside.
- Heat olive oil in a pan over medium heat, sauté garlic, zucchini, and bell pepper until tender.
- Mix ricotta cheese with chopped spinach in a bowl.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, sautéed vegetables, and a layer of mozzarella.
- Repeat the layers ending with noodles topped with marinara sauce and mozzarella cheese.
- Sprinkle parmesan cheese on top.
- Bake in the oven for 30 minutes until cheese is bubbly.
- Let cool for a few minutes before slicing and serving.
Notes
Feel free to add any additional vegetables you like or substitute cheeses as per your preference.
