Instructions
- Prepare the Marinade: In a small bowl, mix the honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk until well combined.
- Marinate the Chicken: Coat the chicken breasts with the honey lime marinade. Let them sit for about 15–20 minutes while you prepare other ingredients.
- Cook the Rice: In a medium pot, bring the chicken broth to a boil. Add the jasmine rice, reduce the heat to low, and cover. Simmer for about 15 minutes or until the rice is cooked and fluffy.
- Cook the Chicken: While the rice cooks, heat the olive oil in a skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C).
- Assemble the Stack: Start with a layer of rice. Add sliced chicken on top, followed by diced avocado, chopped red onion, and fresh cilantro. Squeeze extra lime juice over the top for that extra tang.
- Serve and Enjoy: Garnish with lime wedges and serve immediately.
