Instructions

  1. Prepare the Marinade: In a small bowl, mix the honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk until well combined.
  2. Marinate the Chicken: Coat the chicken breasts with the honey lime marinade. Let them sit for about 15–20 minutes while you prepare other ingredients.
  3. Cook the Rice: In a medium pot, bring the chicken broth to a boil. Add the jasmine rice, reduce the heat to low, and cover. Simmer for about 15 minutes or until the rice is cooked and fluffy.
  4. Cook the Chicken: While the rice cooks, heat the olive oil in a skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C).
  5. Assemble the Stack: Start with a layer of rice. Add sliced chicken on top, followed by diced avocado, chopped red onion, and fresh cilantro. Squeeze extra lime juice over the top for that extra tang.
  6. Serve and Enjoy: Garnish with lime wedges and serve immediately.
