  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 pound boneless skinless chicken thighs
  • 1/2 teaspoon chili powder
  • 1 medium jalapeno pepper (thinly sliced)
  • 1 cup fresh raspberries

Instructions

  1. Prepare the Sauce: In a bowl, mix the raspberry preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Whisk until well combined.
  2. Season the Chicken: Sprinkle the chicken thighs with salt, black pepper, and chili powder. Make sure to coat them evenly.
  3. Cook the Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned chicken thighs and sear for about 5-7 minutes on each side, or until they are golden brown and cooked through.
  4. Add the Sauce: Pour the raspberry sauce over the chicken in the skillet. Reduce the heat and let it simmer for about 3-5 minutes. The sauce will thicken and glisten over the chicken.
  5. Add Jalapenos: Toss in the sliced jalapeno pepper into the skillet and let it simmer with the chicken for a minute, just enough to soften a bit while still keeping its crunch.
  6. Serve: Transfer the chicken to a platter and pour the remaining sauce over the top. Garnish with fresh raspberries.

Notes

Serve with jasmine rice or mashed potatoes and steamed vegetables for a complete meal. Store leftovers in an airtight container for up to 3 days.
