- 1 cup raspberry preserves
- 2 tablespoons extra virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic (minced)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 pound boneless skinless chicken thighs
- 1/2 teaspoon chili powder
- 1 medium jalapeno pepper (thinly sliced)
- 1 cup fresh raspberries
Instructions
- Prepare the Sauce: In a bowl, mix the raspberry preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Whisk until well combined.
- Season the Chicken: Sprinkle the chicken thighs with salt, black pepper, and chili powder. Make sure to coat them evenly.
- Cook the Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned chicken thighs and sear for about 5-7 minutes on each side, or until they are golden brown and cooked through.
- Add the Sauce: Pour the raspberry sauce over the chicken in the skillet. Reduce the heat and let it simmer for about 3-5 minutes. The sauce will thicken and glisten over the chicken.
- Add Jalapenos: Toss in the sliced jalapeno pepper into the skillet and let it simmer with the chicken for a minute, just enough to soften a bit while still keeping its crunch.
- Serve: Transfer the chicken to a platter and pour the remaining sauce over the top. Garnish with fresh raspberries.
Notes
Serve with jasmine rice or mashed potatoes and steamed vegetables for a complete meal. Store leftovers in an airtight container for up to 3 days.
