A delightful dish of tender chicken thighs coated in a sticky, sweet, and savory honey garlic glaze.

- 8 boneless, skinless chicken thighs, cut into 1-inch pieces
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp vegetable oil, plus more for searing
- 1 tbsp unsalted butter
- 4 cloves garlic, minced
- 110g (1/3 cup) honey
- 80ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- ½ tsp chilli flakes (optional)
- 2 tbsp cornstarch
- 4 tbsp cold water (for slurry)
- 1 tbsp finely chopped fresh parsley
- Cooked rice, for serving
Instructions
- Start by patting the chicken pieces dry with paper towels. In a medium bowl, drizzle the chicken with 2 tablespoons of vegetable oil, then sprinkle with salt and black pepper. Toss to coat the chicken evenly.
- Next, combine the minced garlic, honey, chicken stock, rice vinegar, light soy sauce, and optional chilli flakes in a measuring cup or bowl. Whisk until well mixed. In a separate bowl, whisk cornstarch with cold water until smooth for the slurry.
- Heat a large non-stick or cast-iron skillet over medium-high heat. Add a drizzle of vegetable oil and the tablespoon of unsalted butter, then sear the chicken in batches, cooking each for 3-4 minutes per side until golden brown and cooked through.
- After cooking the chicken, reduce the heat to medium-low. Pour the honey garlic sauce into the skillet and simmer, stirring continuously. Re-whisk the cornstarch slurry and slowly add it to the sauce, stirring until it thickens.
- Finally, return the cooked chicken to the skillet, tossing to coat in the glaze. Simmer for another 1-2 minutes to meld the flavors.
- Transfer to a serving platter or individual bowls and garnish with parsley. Serve immediately over cooked rice.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
