Description

A delightful dish of tender chicken thighs coated in a sticky, sweet, and savory honey garlic glaze.


Ingredients

  • 8 boneless, skinless chicken thighs, cut into 1-inch pieces
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp vegetable oil, plus more for searing
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 110g (1/3 cup) honey
  • 80ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • ½ tsp chilli flakes (optional)
  • 2 tbsp cornstarch
  • 4 tbsp cold water (for slurry)
  • 1 tbsp finely chopped fresh parsley
  • Cooked rice, for serving

Instructions

  1. Start by patting the chicken pieces dry with paper towels. In a medium bowl, drizzle the chicken with 2 tablespoons of vegetable oil, then sprinkle with salt and black pepper. Toss to coat the chicken evenly.
  2. Next, combine the minced garlic, honey, chicken stock, rice vinegar, light soy sauce, and optional chilli flakes in a measuring cup or bowl. Whisk until well mixed. In a separate bowl, whisk cornstarch with cold water until smooth for the slurry.
  3. Heat a large non-stick or cast-iron skillet over medium-high heat. Add a drizzle of vegetable oil and the tablespoon of unsalted butter, then sear the chicken in batches, cooking each for 3-4 minutes per side until golden brown and cooked through.
  4. After cooking the chicken, reduce the heat to medium-low. Pour the honey garlic sauce into the skillet and simmer, stirring continuously. Re-whisk the cornstarch slurry and slowly add it to the sauce, stirring until it thickens.
  5. Finally, return the cooked chicken to the skillet, tossing to coat in the glaze. Simmer for another 1-2 minutes to meld the flavors.
  6. Transfer to a serving platter or individual bowls and garnish with parsley. Serve immediately over cooked rice.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
