Ingredients

  • 1 cup mango puree
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or heat a skillet over medium heat.
  2. Combine the mango puree, soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a mixing bowl.
  3. Season the chicken breasts with salt and pepper to taste.
  4. If baking, place the chicken in a baking dish, pour the mango glaze over them, and bake for 25-30 minutes.
  5. If skillet-searing, cook the chicken in the heated skillet for 6-8 minutes on each side until golden brown, basting with the glaze.
  6. Remove the chicken from heat and let it rest for a few minutes.
  7. Slice the chicken and drizzle with remaining glaze; garnish with chopped green onions before serving.

Notes
