- 4 chicken breasts
- 1 cup mango puree
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C) or heat a skillet over medium heat.
- Combine the mango puree, soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a mixing bowl.
- Season the chicken breasts with salt and pepper to taste.
- If baking, place the chicken in a baking dish, pour the mango glaze over them, and bake for 25-30 minutes.
- If skillet-searing, cook the chicken in the heated skillet for 6-8 minutes on each side until golden brown, basting with the glaze.
- Remove the chicken from heat and let it rest for a few minutes.
- Slice the chicken and drizzle with remaining glaze; garnish with chopped green onions before serving.
Notes
Allow chicken to rest after cooking for juiciness. Use fresh mangoes for a fresher taste.
