Description
Warm baked sweet potatoes filled with cinnamon-spiced sautéed apples, butter, and maple syrup. A cozy fall side dish or light dessert that’s naturally sweet and irresistibly comforting.
Ingredients
4 medium sweet potatoes
2 apples, diced (Honeycrisp, Gala, or Fuji)
1 tbsp butter
1 tbsp olive oil
1 1/2 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/4 cup chopped pecans (optional)
Extra butter or maple syrup for topping
Instructions
1. Preheat oven to 400°F (200°C).
2. Pierce sweet potatoes several times and bake 45–55 minutes, or until tender.
3. While they bake, heat butter and olive oil in a skillet.
4. Add diced apples, cinnamon, nutmeg, maple syrup, and salt.
5. Sauté 6–8 minutes until apples soften and caramelize.
6. Slice baked sweet potatoes open and fluff the centers with a fork.
7. Spoon the warm apple mixture inside.
8. Top with pecans and an extra drizzle of butter or maple syrup.
9. Serve immediately.
Notes
Add a spoonful of creamy Greek yogurt or mascarpone for a dessert version.
Substitute pears for apples for a softer, sweeter filling.
Great for holiday meals or meal prep breakfasts.
