Description
Perfectly roasted sweet potato rounds topped with creamy feta, a drizzle of warm honey, and fresh thyme. A simple yet elegant appetizer or side dish bursting with sweet–savory flavor.
Ingredients
2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 cup crumbled feta cheese
2–3 tbsp honey (warm slightly)
Fresh thyme leaves for garnish
Instructions
1. Preheat oven to 425°F (220°C).
2. Slice sweet potatoes into even 1/2-inch rounds and place on a baking sheet.
3. Brush both sides with olive oil and season with salt and pepper.
4. Roast for 22–25 minutes, flipping halfway, until tender and lightly caramelized.
5. Top each round with crumbled feta.
6. Drizzle with warm honey.
7. Finish with fresh thyme and serve immediately.
Notes
For extra flavor, add a sprinkle of smoked paprika before roasting.
Goat cheese can be substituted for feta.
These make a beautiful holiday appetizer or brunch side.
