Ingredients
2 large sweet potatoes, scrubbed and sliced into 1/2-inch rounds
2 tbsp olive oil
Salt and black pepper, to taste
1/2 cup crumbled feta cheese
2 tbsp honey (plus more for drizzling)
1 tsp fresh thyme leaves (or rosemary)
Optional toppings: chopped walnuts or pecans, chili flakes, microgreens
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Arrange sweet potato rounds in a single layer and brush with olive oil on both sides.
3. Season with salt and black pepper.
4. Roast for 20–25 minutes, flipping halfway, until golden brown and tender.
5. Remove from the oven and let cool slightly.
6. Top each round with crumbled feta, a drizzle of honey, and a sprinkle of thyme.
7. Add optional toppings like chopped nuts or chili flakes for extra texture and flavor.
8. Serve warm as an appetizer or side dish.
Notes
Try using whipped feta instead of crumbled for a creamier bite.
Substitute goat cheese or ricotta for a different flavor.
