Description

A colorful and wholesome tray bake featuring tender roasted sweet potatoes, crisp green beans, and caramelized red onions all tossed with olive oil, garlic, and herbs for an easy, one-pan side or light main dish.


Ingredients

Scale

2 medium sweet potatoes, peeled and cubed

1/2 lb (225 g) fresh green beans, trimmed

1 red onion, sliced

3 tbsp olive oil

2 garlic cloves, minced

1 tsp smoked paprika

1/2 tsp dried thyme

Salt and pepper, to taste

Optional: crumbled feta or chopped nuts for serving


Instructions

1. Preheat oven to 425°F (220°C) and line a large baking tray with parchment paper.

2. Toss sweet potato cubes with 2 tbsp olive oil, garlic, paprika, thyme, salt, and pepper.

3. Spread on the tray and roast for 20 minutes.

4. Add green beans and red onion to the tray, drizzle with remaining olive oil, and toss.

5. Continue roasting for another 15–20 minutes, until vegetables are tender and slightly caramelized.

6. Transfer to a serving dish and sprinkle with feta or nuts if desired.

7. Serve warm as a side or over quinoa for a complete meal.

Notes

Add chickpeas before roasting for extra protein.

Use harissa or balsamic glaze for a flavor twist.
