  • Author: Jack
  • Total Time: 1 hour 5 minutes
  • Yield: 6 servings 1x

Description

This sweet potato and sausage casserole is the ultimate one-pan comfort meal, combining tender caramelized sweet potatoes with savory sausage and aromatic herbs. Perfect for busy weeknights or cozy weekend dinners, this naturally gluten-free dish delivers maximum flavor with minimal effort.

Ingredients

Scale

3 pounds sweet potatoes, peeled and cubed into 1-inch pieces

1 pound turkey or chicken sausage, sliced into ½-inch rounds

2 medium yellow onions, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

1 teaspoon smoked paprika

½ teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

½ cup low-sodium chicken or vegetable broth

Fresh parsley, chopped for garnish

Instructions

1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish or large cast-iron skillet.

2. In the prepared baking dish, combine cubed sweet potatoes, sliced sausage, and diced onions. Drizzle with olive oil and toss to coat evenly.

3. Add minced garlic, thyme, smoked paprika, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well-seasoned.

4. Pour chicken broth around the edges of the pan. Cover tightly with aluminum foil.

5. Bake covered for 25 minutes until sweet potatoes begin to soften.

6. Remove foil and continue baking uncovered for 20-25 minutes, stirring once halfway through, until sweet potatoes are tender with golden caramelized edges.

7. Remove from oven and let rest for 5-7 minutes. Garnish with fresh chopped parsley and serve hot.

Notes

For extra caramelization, broil for the last 2-3 minutes of cooking, watching carefully to prevent burning.

You can substitute butternut squash for sweet potatoes for a similar flavor profile.

This casserole stores well in the refrigerator for up to 4 days or freezer for up to 3 months.

Feel free to add vegetables like bell peppers, Brussels sprouts, or zucchini for extra nutrition.

If using pre-cooked sausage, add it during the last 15 minutes of cooking to prevent drying out.
