Roasted Sweet Potato Rounds with Honey & Feta caramelized, tender sweet potato slices topped with creamy feta, a drizzle of honey, and a sprinkle of herbs. A stunning, simple side or appetizer with the perfect balance of sweet and savory.
Ingredients
2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
2 tbsp olive oil
Salt and black pepper, to taste
1/2 cup crumbled feta cheese
2 tbsp honey (or maple syrup)
1 tbsp fresh thyme or rosemary, chopped
1/4 cup chopped pecans or walnuts (optional)
Fresh parsley, for garnish
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss sweet potato rounds with olive oil, salt, and pepper until evenly coated.
3. Arrange in a single layer on the baking sheet.
4. Roast for 20 minutes, flip, and roast another 10–15 minutes until tender and golden at the edges.
5. Transfer to a serving platter and let cool slightly.
6. Top each round with a sprinkle of feta cheese, a drizzle of honey, and a few herbs.
7. Add chopped nuts for crunch, if using.
8. Garnish with parsley and serve warm or at room temperature.
Notes
For extra flavor, add a drizzle of balsamic glaze or a pinch of chili flakes.
Goat cheese can be used instead of feta for a creamier texture.
These make a beautiful appetizer or side dish for holiday dinners.
Can be made ahead and reheated just before serving — add honey and feta last.
