A cozy twist on a classic this Sweet Potato & Cranberry Gratin layers creamy sweet potatoes with tart cranberries, rich cream, and a golden Parmesan crust for the perfect fall or holiday side dish.
Ingredients
3 medium sweet potatoes, peeled and thinly sliced
1/2 cup dried cranberries
1 cup heavy cream
1/2 cup milk
2 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
1/2 cup grated Parmesan cheese
1/4 cup chopped pecans (optional)
Fresh thyme for garnish
Instructions
1. Preheat oven to 375°F (190°C) and butter a 9×9-inch baking dish.
2. Arrange half of the sweet potato slices in the dish and sprinkle with half the cranberries.
3. Combine cream, milk, butter, salt, pepper, and nutmeg in a saucepan and heat gently until butter melts.
4. Pour half of the cream mixture over the first layer.
5. Repeat with remaining sweet potatoes, cranberries, and cream mixture.
6. Top with grated Parmesan and pecans.
7. Cover with foil and bake for 35 minutes.
8. Uncover and bake an additional 15 minutes, until golden and bubbly.
9. Let rest 10 minutes before serving, garnished with fresh thyme.
Notes
For a lighter version, substitute half-and-half for cream.
Add a sprinkle of cinnamon or maple syrup for a sweeter take.
Pairs beautifully with roasted turkey or pork tenderloin.
