Description
These crispy stuffed potato pancakes are loaded with cheesy beef and pan-fried to perfection perfect for family dinners or comfort food cravings!
Ingredients
2 cups grated potatoes, squeezed dry
1/2 lb ground beef, cooked and seasoned
1/2 cup shredded mozzarella cheese
1 small onion, finely chopped
1/4 cup flour
1 egg
1/2 tsp garlic powder
1/4 tsp paprika
Salt & pepper to taste
Oil for frying
Instructions
1. Grate and squeeze moisture from the potatoes.
2. Combine potatoes with flour, egg, and seasonings.
3. Cook ground beef with onions until browned; let cool.
4. Mix cooked beef with shredded cheese.
5. Heat oil in skillet over medium heat.
6. Spoon potato mixture to form base pancake.
7. Add 1–2 tbsp beef-cheese filling, then cover with more batter.
8. Fry each side for 3–4 minutes until golden brown.
9. Let cool for 2 minutes before serving.
Notes
Swap ground turkey or mushrooms for the beef if preferred.
These freeze well just reheat in the oven for 10 minutes at 350°F.
Serve with sour cream, salsa, or garlic yogurt sauce.
