Description
Stuffed Chicken with roasted red peppers, spinach, and mozzarella is juicy, cheesy, and perfect for weeknight dinners or family meals.
Ingredients
4 boneless, skinless chicken breasts
1 cup roasted red peppers, sliced
1 cup fresh spinach
1 cup shredded mozzarella cheese
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. Butterfly and season chicken breasts with olive oil, garlic, paprika, salt, and pepper.
3. Layer roasted red peppers, spinach, and mozzarella inside each breast.
4. Secure with toothpicks and sear in skillet until golden.
5. Transfer to oven and bake 20–25 minutes until cooked through.
6. Let rest 5 minutes before serving.
Notes
You can swap mozzarella with feta or cheddar for different flavors.
Refrigerate leftovers for 3 days or freeze for 2 months.
