Ingredients
2 pounds beef chuck, cubed
6 large flour tortillas
1 cup cooked Spanish rice
1 cup refried beans
1 cup shredded Mexican cheese blend
1/2 cup sour cream
1/4 cup diced onions
2 cloves garlic, minced
1 bell pepper, diced
2 tablespoons olive oil
1 cup beef broth
1/4 cup fresh cilantro, chopped
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Salt and black pepper to taste
Lime wedges for serving
Instructions
1. Pat beef dry and toss with all Mexican spices until evenly coated.
2. Let seasoned meat rest 15 minutes at room temperature.
3. Heat olive oil in Dutch oven over medium-high heat.
4. Brown beef pieces on all sides, about 8 minutes total.
5. Add onions, garlic, and bell pepper, cook until softened.
6. Pour beef broth over meat and vegetables, bring to simmer.
7. Cover and cook on low heat 2-3 hours until beef shreds easily.
8. Shred cooked beef with two forks and mix with cooking juices.
9. Warm tortillas in dry skillet until pliable.
10. Layer rice, beans, shredded beef, cheese, and sour cream in center.
11. Fold bottom edge up, then sides in, rolling tightly.
12. Serve immediately with lime wedges and fresh cilantro.
Notes
Chuck roast becomes most tender with slow cooking.
Don’t rush the braising process for best texture.
Warm tortillas prevent tearing during assembly.
Wrap tightly and serve seam-side down.
Can be assembled ahead and reheated when ready to serve.
