Ingredients

  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice according to the package instructions, about 15-20 minutes.
  2. In a skillet, heat olive oil over medium heat.
  3. Add the sliced grilled chicken, corn, diced bell pepper, smoked paprika, salt, and pepper. Cook until heated through, around 5 minutes.
  4. Assemble your bowl by layering rice, chicken and corn mixture, avocado slices, and squeezing fresh lime juice on top.
  5. Garnish with fresh cilantro. Serve immediately and enjoy!

Notes
