Ingredients

- 1 cup rice
- 2 grilled chicken breasts, sliced
- 1 cup sweet corn (canned or fresh)
- 1 bell pepper, diced
- 1 avocado, sliced
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the rice according to the package instructions, about 15-20 minutes.
- In a skillet, heat olive oil over medium heat.
- Add the sliced grilled chicken, corn, diced bell pepper, smoked paprika, salt, and pepper. Cook until heated through, around 5 minutes.
- Assemble your bowl by layering rice, chicken and corn mixture, avocado slices, and squeezing fresh lime juice on top.
- Garnish with fresh cilantro. Serve immediately and enjoy!
Notes
Use leftover grilled chicken to save time. Feel free to add other vegetables like cherry tomatoes or jalapeños for extra flavor.
