Description
Soft, strawberry-infused sugar cookies rolled in sparkling sugar bright, buttery, and perfect for celebrations.
Ingredients
1 cup unsalted butter, softened
1½ cups granulated sugar
2 large eggs
1 tsp vanilla extract
2¼ cups all-purpose flour
2 tbsp cornstarch
1 tsp baking powder
½ tsp baking soda
2 tsp cream of tartar
½ tsp salt
6 tbsp freeze-dried strawberry powder
Optional: red gel food coloring
½ cup sparkling (sanding) sugar
1 tbsp freeze-dried strawberry powder (for sparkling sugar)
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets.
2. Cream butter and sugar until light.
3. Beat in eggs, vanilla, and strawberry powder (and food coloring if using).
4. Whisk dry ingredients in separate bowl.
5. Fold dry into wet until just combined.
6. Make sparkling sugar: mix sanding sugar with strawberry powder.
7. Scoop dough balls, roll in sparkling sugar, place on sheet.
8. Bake 8–10 minutes until edges set.
9. Cool on sheets 2 min, transfer to rack to cool completely.
Notes
For best texture use freeze-dried powder avoids soggy dough.
Store in airtight container up to 5 days or freeze for later.
Dough can be chilled to prevent spreading.
