Description
Soft, buttery sugar cookies bursting with strawberry flavor and coated in a sparkling strawberry sugar sweet, fruity, and perfect for spring or Valentine’s Day!
Ingredients
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup freeze-dried strawberries, finely crushed
1 large egg
1 tsp vanilla extract
1/2 tsp strawberry extract (optional)
Red or pink sanding sugar (for rolling)
Extra crushed freeze-dried strawberries (for sugar coating)
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a small bowl, combine flour, baking soda, and salt.
3. In a large bowl, cream butter, sugar, and crushed freeze-dried strawberries until fluffy.
4. Beat in egg, vanilla, and strawberry extract.
5. Gradually mix in dry ingredients until combined.
6. In a shallow bowl, mix sanding sugar with extra crushed freeze-dried strawberries to make the sparkling strawberry sugar.
7. Scoop 1 tablespoon of dough, roll into balls, and coat in the strawberry sugar.
8. Place 2 inches apart on baking sheet and flatten slightly.
9. Bake for 9–11 minutes, until edges are just set.
10. Cool for 5 minutes on the pan, then transfer to a wire rack.
Notes
For a deeper strawberry flavor, add 1 tbsp of strawberry jam to the dough.
Store cookies in an airtight container at room temperature for up to 4 days.
Freeze-dried strawberries can be pulsed in a food processor to create fine powder for the sugar coating.
