Ingredients

1 cup pitted Medjool dates, soaked if hard

1 cup raw cashews or almonds

1 cup old-fashioned rolled oats

1/2 cup fresh strawberries, diced and patted dry

2 tablespoons coconut flour

1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

2 tablespoons vanilla protein powder (optional)

2 tablespoons mini white chocolate chips (optional)

1/2 cup unsweetened shredded coconut for rolling

2 tablespoons freeze-dried strawberry powder for rolling


Instructions

1. Soak dates in warm water for 10 minutes if hard, then drain thoroughly.

2. Hull and dice strawberries into 1/4-inch pieces, pat completely dry with paper towels.

3. In food processor, process dates until they form a paste-like consistency.

4. Add nuts and pulse until roughly chopped but not completely ground.

5. Add oats, coconut flour, honey, vanilla extract, and salt, pulsing to combine.

6. Add diced strawberries and pulse briefly just to incorporate without over-processing.

7. Test mixture – it should hold together when pressed but not be overly sticky.

8. Line baking sheet with parchment paper.

9. Using hands or small cookie scoop, roll mixture into 1-inch balls, pressing firmly.

10. Roll each ball in shredded coconut or strawberry powder for coating.

11. Place on prepared baking sheet and refrigerate for 30 minutes to firm up.

12. Store in airtight container in refrigerator up to 1 week or freeze up to 3 months.

Notes

Pat strawberries completely dry to prevent mixture from becoming too wet.

Freeze-dried strawberries can substitute for fresh – use 1/4 cup.

If mixture is too dry, add honey 1 teaspoon at a time.

If mixture is too wet, add more coconut flour or oats.

Energy bites taste best after 24 hours as flavors meld together.

Can be made vegan by using maple syrup instead of honey.
