  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar (for strawberries)
  • Whipped cream (for serving, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your 8×8-inch baking dish to prevent sticking.
  2. Cream together the softened butter and sugar until the mixture becomes light and fluffy.
  3. Mix the flour, cornstarch, baking powder, and salt in another bowl. Gradually add this dry mixture to the butter mixture, stirring until just combined.
  4. Press the dough evenly into the bottom of your prepared baking dish.
  5. Toss the sliced strawberries with lemon juice and 1 tablespoon of sugar. Let this sit for about 10 minutes.
  6. Spread the strawberry mixture evenly over the shortcake base.
  7. Bake for 25-30 minutes or until the edges are golden brown and the center is set.
  8. Allow the bars to cool completely before slicing them into squares.

Notes
