- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, sliced
- 1 tablespoon lemon juice
- 1 tablespoon sugar (for strawberries)
- Whipped cream (for serving, optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease your 8×8-inch baking dish to prevent sticking.
- Cream together the softened butter and sugar until the mixture becomes light and fluffy.
- Mix the flour, cornstarch, baking powder, and salt in another bowl. Gradually add this dry mixture to the butter mixture, stirring until just combined.
- Press the dough evenly into the bottom of your prepared baking dish.
- Toss the sliced strawberries with lemon juice and 1 tablespoon of sugar. Let this sit for about 10 minutes.
- Spread the strawberry mixture evenly over the shortcake base.
- Bake for 25-30 minutes or until the edges are golden brown and the center is set.
- Allow the bars to cool completely before slicing them into squares.
Notes
Serve with a dollop of whipped cream or a scoop of vanilla ice cream. Store leftovers in an airtight container in the fridge for 3-4 days.
