Instructions

  1. Prepare the chicken: If you haven’t already cooked your chicken, grill or bake it until it reaches a safe internal temperature. Once cooked, let it rest for a few minutes before slicing it into thin strips.
  2. Slice the strawberries and red onion: Hull the strawberries by removing their green tops, then slice them into thin pieces. For the red onion, slice it thinly to keep the flavor mellow.
  3. Toast the almonds: Toss sliced almonds into a dry skillet over medium heat. Stir occasionally until they turn golden brown, which usually takes 3-5 minutes.
  4. Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning if needed.
