These Strawberry Cheesecake Red Velvet Cupcakes are moist, tangy, and filled with real strawberry cheesecake perfect for special occasions or everyday indulgence.
Ingredients
1 1/4 cups all-purpose flour
1 tbsp cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter
3/4 cup sugar
1 egg
1/2 cup buttermilk
1 tsp vanilla
1 tsp vinegar
Red food coloring
6 oz cream cheese
3 tbsp powdered sugar
1/2 tsp vanilla
1/2 cup diced strawberries
Instructions
1. Preheat oven to 350°F (175°C) and line muffin tin with liners.
2. Beat butter and sugar until light and fluffy.
3. Add egg, buttermilk, vanilla, vinegar, and food coloring.
4. Sift and mix in dry ingredients.
5. In a separate bowl, mix cream cheese, powdered sugar, vanilla, and strawberries.
6. Fill liners halfway with batter, add spoon of filling, top with more batter.
7. Bake for 18–22 minutes.
8. Cool and serve.
Notes
Use raspberries or lemon zest for flavor twists.
Refrigerate leftovers for up to 4 days.
