- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup strawberries, chopped
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the sugar and softened butter until light and fluffy.
- Beat in the egg and vanilla extract.
- Mix the flour, baking soda, and salt in another bowl. Gradually add this to the creamed mixture.
- Fold in the chopped strawberries.
- Beat the cream cheese, powdered sugar, and additional vanilla extract until smooth.
- Scoop a tablespoon of cookie dough, add a teaspoon of cheesecake filling, and cover with more dough.
- Place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until golden brown.
- Let cool on a wire rack before serving.
