  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the sugar and softened butter until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Mix the flour, baking soda, and salt in another bowl. Gradually add this to the creamed mixture.
  5. Fold in the chopped strawberries.
  6. Beat the cream cheese, powdered sugar, and additional vanilla extract until smooth.
  7. Scoop a tablespoon of cookie dough, add a teaspoon of cheesecake filling, and cover with more dough.
  8. Place on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes until golden brown.
  10. Let cool on a wire rack before serving.
