- 1 cup spinach (or other leafy greens)
- 1/2 cup cream cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup sun-dried tomatoes (chopped)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 4 pieces beef steaks (flank, skirt, flat iron, or top round recommended)
- Olive oil (for brushing on the exterior)
- Fresh herbs (such as basil or parsley) for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the cream cheese, shredded cheese, garlic, sun-dried tomatoes, and spinach in a medium bowl. Season with salt and pepper to taste.
- Flatten the beef steaks with a meat tenderizer or rolling pin to about 1/4 inch thick.
- Spread the filling evenly among the steaks, leaving a half-inch border.
- Roll the steaks tightly into pinwheels, tucking in the sides and securing with toothpicks if necessary.
- Brush the pinwheels with olive oil and place seam-side down on a baking sheet.
- Bake for 20-25 minutes until browned and cooked to your desired doneness. Let rest for a few minutes, then slice and serve, garnished with fresh herbs if desired.
Notes
To elevate the presentation, sprinkle some freshly chopped herbs on top, and don’t hesitate to drizzle a little balsamic glaze over the plate for extra flair! If you have leftovers, store them in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
