- 1 cup spinach
- 1/2 cup cream cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup sun-dried tomatoes (chopped)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 4 pieces beef steaks (flank, skirt, flat iron, or top round)
- Olive oil (for brushing on the exterior)
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together the cream cheese, shredded cheese, minced garlic, sun-dried tomatoes, and spinach in a medium bowl. Season with salt and pepper to taste.
- Lay the beef steaks flat on a clean cutting board and pound them to about 1/4 inch thick.
- Spread the cheese mixture evenly among the steaks, leaving a half-inch border on the sides.
- Roll the steaks tightly, tucking in the sides to secure them.
- Brush the outside of each pinwheel with olive oil and place them seam-side down on a baking sheet.
- Bake for about 20-25 minutes until browned and cooked to your desired doneness (145°F for medium).
- Let them rest for a few minutes, then slice into bite-sized pieces. Serve warm, garnished with fresh herbs if desired.
