Description

Quick and delicious spinach and feta quesadillas that are easy to make and loved by the whole family.


Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 4 whole wheat tortillas
  • Greek yogurt or tzatziki (for serving)
  • Optional: vegetables (mushrooms, bell peppers)

Instructions

  1. Heat a pan over medium heat.
  2. Place a tortilla in the pan and layer it with fresh spinach, feta cheese, and mozzarella.
  3. Top with another tortilla and gently press down.
  4. Cook until the bottom is golden brown, then flip carefully.
  5. Repeat with remaining tortillas and filling, keeping them warm in a low oven.
  6. Cut the quesadillas into wedges and serve with Greek yogurt or tzatziki.

Notes

For best results, dry the spinach before using to avoid sogginess. Experiment with different fillings for added flavor!
