Description
This Spicy Southwest Chicken Salad is loaded with smoky grilled chicken, fresh vegetables, and a creamy, zesty dressing for the ultimate hearty salad.
Ingredients
2 boneless skinless chicken breasts
1 tbsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
2 tbsp olive oil
Juice of 1 lime
Salt and pepper to taste
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup black beans, drained and rinsed
1 cup corn kernels
1/2 cup shredded cheddar cheese
1/4 cup sliced red onion
1 avocado, diced
For Dressing:
1/2 cup Greek yogurt
2 tbsp mayonnaise
1 tbsp lime juice
1/2 tsp chili powder
Instructions
1. In a bowl, combine chili powder, smoked paprika, cumin, garlic powder, olive oil, lime juice, salt, and pepper.
2. Add chicken and marinate for at least 15 minutes.
3. Preheat grill or skillet over medium-high heat.
4. Grill chicken for 5–6 minutes per side, until internal temp reaches 165°F (74°C).
5. Let rest for 5 minutes, then slice.
6. Arrange lettuce, tomatoes, beans, corn, cheese, onion, and avocado in bowls.
7. Top with sliced chicken.
8. Whisk dressing ingredients until smooth and drizzle over salad.
Notes
You can swap chicken for turkey or shrimp.
Store dressing separately if meal prepping.
