- 1 tablespoon Sesame Oil

- 1 tablespoon Rice Vinegar
- 0.5 teaspoon Crushed Red Pepper Flakes
- 0.25 teaspoon Ground Ginger
- 3 Green Onions, sliced
- 1 tablespoon Sesame Seeds (Plus extra for garnish)
- 2 medium Cucumbers, thinly sliced
- 0.25 Red Onion, thinly sliced
- 1 tablespoon Apple Cider Vinegar
- 1 tablespoon Additional Sugar-Free Sweetener
- 0.5 teaspoon Salt
- 0.25 teaspoon Black Pepper
Instructions
- Brown the ground beef in a skillet over medium-high heat for 5-7 minutes, stirring until browned. Drain excess fat.
- Add minced garlic and cook for 1-2 minutes until fragrant. Stir in sesame oil, soy sauce, sugar-free sweetener, rice vinegar, crushed red pepper flakes, ground ginger, salt, and black pepper. Simmer for 2-3 minutes.
- In a bowl, combine sliced cucumbers, red onion, apple cider vinegar, and extra sugar-free sweetener; toss to blend.
- Stir green onions and sesame seeds into the beef mixture and cook for another 1-2 minutes.
- Serve by layering cucumber salad on a plate and topping with spicy ground beef, garnishing with sesame seeds and green onions.
