  • 0.25 cup Soy Sauce or Coconut Aminos
  • 2 tablespoons Sugar-Free Sweetener (Erythritol or monk fruit)
  • 1 tablespoon Rice Vinegar
  • 0.5 teaspoon Crushed Red Pepper Flakes
  • 0.25 teaspoon Ground Ginger
  • 3 Green Onions, sliced
  • 1 tablespoon Sesame Seeds (Plus extra for garnish)
  • 2 medium Cucumbers, thinly sliced
  • 0.25 Red Onion, thinly sliced
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Additional Sugar-Free Sweetener
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. Brown the ground beef in a skillet over medium-high heat for 5-7 minutes, stirring until browned. Drain excess fat.
  2. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in sesame oil, soy sauce, sugar-free sweetener, rice vinegar, crushed red pepper flakes, ground ginger, salt, and black pepper. Simmer for 2-3 minutes.
  3. In a bowl, combine sliced cucumbers, red onion, apple cider vinegar, and extra sugar-free sweetener; toss to blend.
  4. Stir green onions and sesame seeds into the beef mixture and cook for another 1-2 minutes.
  5. Serve by layering cucumber salad on a plate and topping with spicy ground beef, garnishing with sesame seeds and green onions.
