Description
Spicy Garlic Chili Oil Noodles fiery, fragrant, and full of umami! Chewy noodles tossed in homemade garlic chili oil with soy sauce, vinegar, and scallions. A quick 10-minute comfort dish with bold flavor.
Ingredients
8 oz (225g) wheat noodles (ramen, udon, or spaghetti)
3 tbsp chili oil (store-bought or homemade)
4 garlic cloves, finely minced
1 tbsp soy sauce
1 tbsp dark soy sauce (optional, for color and depth)
1 tbsp black vinegar (or rice vinegar)
1/2 tsp sugar
1/2 tsp crushed red pepper flakes (optional for extra heat)
2 green onions, chopped
1 tsp sesame seeds (optional)
1 tbsp vegetable or sesame oil (for blooming the garlic)
Instructions
1. Cook noodles according to package directions until al dente. Drain and set aside.
2. In a large heatproof bowl, add minced garlic, chili oil, soy sauces, vinegar, sugar, red pepper flakes, and half of the chopped green onions.
3. In a small saucepan, heat vegetable or sesame oil until shimmering hot (almost smoking).
4. Carefully pour the hot oil over the garlic mixture — it should sizzle and bloom the flavors instantly.
5. Add the cooked noodles to the bowl and toss thoroughly to coat in the sauce.
6. Top with remaining green onions and sesame seeds.
7. Serve immediately while warm and fragrant.
Notes
Adjust the spice level by adding more or less chili oil.
Add sautéed veggies or a fried egg for a more filling meal.
For extra umami, stir in a splash of oyster sauce or a pinch of MSG.
These noodles taste great hot, warm, or even cold for next-day leftovers.
