Description

Soft, chewy oatmeal cookies spiced with nutmeg and cinnamon, sandwiched together with a luscious eggnog cream filling a festive holiday twist on the classic oatmeal cream pie.


Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 3/4 cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp salt

3 cups old-fashioned oats

For the eggnog cream filling:

1/2 cup unsalted butter, softened

1/2 cup marshmallow creme (Fluff)

1 1/2 cups powdered sugar

23 tbsp eggnog

1/4 tsp nutmeg

1/2 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in eggs and vanilla until smooth.

4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.

5. Gradually mix dry ingredients into wet ingredients until just combined.

6. Stir in oats.

7. Drop dough by rounded tablespoons onto baking sheets, spacing 2 inches apart.

8. Bake for 9–11 minutes, until edges are golden but centers are soft. Cool completely.

9. To make the filling, beat together butter, marshmallow creme, powdered sugar, eggnog, nutmeg, and vanilla until light and fluffy.

10. Spread or pipe filling onto the flat side of one cookie, then sandwich with another.

11. Chill for 15–20 minutes before serving for best texture.

Notes

For extra eggnog flavor, add 1 tbsp rum extract or bourbon to the filling.

Store in an airtight container in the refrigerator for up to 5 days.
