Ingredients

12 oz (340g) spaghetti

2 tbsp olive oil

3 garlic cloves, minced

1/2 cup sun-dried tomatoes (in oil), chopped

1/2 cup heavy cream

1/2 cup chicken or vegetable broth

1/4 cup grated Parmesan cheese

3 cups fresh baby spinach

1 tsp Italian seasoning

Salt and black pepper, to taste

Crushed red pepper flakes (optional)

Extra Parmesan and basil, for garnish


Instructions

1. Cook spaghetti according to package directions in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

2. In a large skillet, heat olive oil over medium heat.

3. Add garlic and sauté for 30 seconds until fragrant.

4. Add chopped sun-dried tomatoes and cook for 2 minutes to release their flavor.

5. Pour in heavy cream and broth, stirring to combine. Bring to a gentle simmer.

6. Stir in Parmesan cheese, Italian seasoning, salt, and pepper. Simmer for 2–3 minutes until slightly thickened.

7. Add spinach and cook until just wilted.

8. Add the cooked spaghetti to the skillet, tossing to coat in the sauce. Add a splash of pasta water if needed for creaminess.

9. Top with extra Parmesan, basil, and red pepper flakes (if using).

10. Serve warm and enjoy!

Notes

For a lighter version, use half-and-half or coconut cream.

Add grilled chicken or shrimp for extra protein.

Use penne or fettuccine instead of spaghetti for a heartier bite.
