Ingredients

  • 2 cups fresh spinach, roughly chopped
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add the spaghetti and cook it according to the package instructions until al dente. Then drain the spaghetti and set it aside.
  2. In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.
  3. Incorporate the chopped spinach and sun-dried tomatoes into the skillet. Cook until the spinach wilts, around 2-3 minutes.
  4. Pour in the heavy cream, reducing the heat to low. Stir well to combine.
  5. Add the grated Parmesan cheese, red pepper flakes, salt, and pepper. Mix until the cheese melts and the sauce thickens slightly.
  6. Toss the cooked spaghetti into the skillet and gently mix to coat the pasta evenly with the sauce.
  7. Let the dish sit for a minute to allow the flavors to meld together. Garnish with fresh basil before serving, if desired.
