Ingredients

Scale

4 pounds orange-fleshed sweet potatoes (about 6 medium)

1/2 cup pure maple syrup

4 tablespoons unsalted butter, melted

1/2 cup heavy cream

2 large eggs, beaten

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon sea salt

1 cup chopped pecans

1/3 cup all-purpose flour

1/3 cup packed brown sugar

4 tablespoons cold butter, cubed

Pinch of salt for topping

Instructions

1. Preheat oven to 350°F and butter a 9×13-inch baking dish.

2. Peel and cube sweet potatoes into 2-inch pieces.

3. Place sweet potatoes in a large pot, cover with cold water by 2 inches, add pinch of salt, and bring to boil.

4. Reduce heat to medium and simmer 15-20 minutes until fork-tender.

5. Drain thoroughly and return to hot pot for 2 minutes to evaporate excess moisture.

6. Transfer to large bowl and mash until smooth.

7. Mix in melted butter, maple syrup, cream, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until fluffy.

8. Spread mixture evenly into prepared baking dish.

9. In separate bowl, combine pecans, flour, brown sugar, and pinch of salt.

10. Cut in cold butter with pastry cutter until mixture resembles coarse crumbs.

11. Sprinkle topping evenly over sweet potato mixture.

12. Bake 30-35 minutes until edges bubble and topping is golden brown.

13. Let rest 10-15 minutes before serving.

Notes

Sweet potatoes can be boiled up to 2 days ahead and stored in refrigerator.

For smoother texture, use a potato ricer instead of masher.

Casserole can be assembled without topping and refrigerated up to 2 days—add topping just before baking.

If topping browns too quickly, tent with foil.

Substitute walnuts or almonds for pecans if desired.

For gluten-free version, use gluten-free flour or omit flour entirely from topping.
