Soft Ricotta Almond Pillows are light, airy, and sweet with a delicate almond flavor perfect for snacking or dessert.
Ingredients
1 cup ricotta cheese
1 cup almond flour
2 tbsp honey or monk fruit
1 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp baking powder
Zest of 1 lemon
Pinch of salt
Instructions
1. Preheat oven to 350°F and line a tray with parchment paper.
2. Pat ricotta dry to remove excess moisture.
3. Mix ricotta, almond flour, honey, extracts, lemon zest, baking powder, and salt.
4. Let batter rest for 10 minutes.
5. Spoon small mounds onto tray.
6. Bake for 18–20 minutes until golden.
7. Cool for 5 minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days.
Reheat at 300°F for 5 minutes before serving.
