These Soft Pumpkin Cookies are tender, fluffy, and full of warm spices, topped with a rich cinnamon cream cheese frosting.
Ingredients
2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp salt
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 cup pumpkin puree
2 tsp vanilla extract
For Frosting:
4 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 tsp cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Whisk together flour, baking soda, spices, and salt.
3. In a large bowl, cream butter and sugars until light and fluffy.
4. Beat in egg, pumpkin puree, and vanilla.
5. Gradually add dry ingredients to wet mixture until combined.
6. Scoop dough onto baking sheets and bake for 10–12 minutes.
7. Cool completely before frosting.
8. Beat frosting ingredients until smooth and spread over cooled cookies.
Notes
Store cookies in an airtight container in the fridge for up to 5 days.
Freeze unfrosted cookies for longer storage.
