Description

A warm, gooey Snickerdoodle Cobbler bursting with cinnamon-sugar flavor crispy on top, soft and custardy underneath. It’s the perfect cozy dessert served with a scoop of vanilla ice cream.

Ingredients

Scale

1 cup all-purpose flour

3/4 cup granulated sugar

1 1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup milk

1/4 cup unsalted butter, melted

1 1/2 tsp vanilla extract

1 cup brown sugar, packed

1 1/2 cups hot water

Topping:

1/4 cup granulated sugar

1 tsp ground cinnamon

Instructions

1. Preheat oven to 350°F (175°C).

2. In a medium bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.

3. Stir in milk, melted butter, and vanilla until smooth — the batter will be thick.

4. Spread batter evenly into a greased 9×9-inch baking dish.

5. In a separate small bowl, mix the topping sugar and cinnamon; sprinkle evenly over the batter.

6. Evenly sprinkle brown sugar on top of everything.

7. Slowly pour the hot water over the mixture (do not stir).

8. Bake for 40–45 minutes, until golden brown and bubbly.

9. Let cool slightly before serving — the bottom will be gooey and saucy.

10. Serve warm with vanilla ice cream or whipped cream.

Notes

For extra flavor, add a pinch of nutmeg or drizzle caramel sauce before serving.

Store leftovers covered in the fridge for up to 3 days; reheat before serving.

Try substituting part of the water with hot apple cider for a fall-inspired twist.
