- 2 lbs chicken thighs
- 1 cup peanut butter
- 1 cup coconut milk
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped peanuts and cilantro for garnish
Instructions
- Mix the Sauce: In your slow cooker, combine the peanut butter, coconut milk, soy sauce, honey, lime juice, minced garlic, and grated ginger. Stir until everything is smooth and well-blended.
- Add the Chicken: Place the chicken thighs into the slow cooker, making sure each piece is well coated with the sauce.
- Season: Sprinkle some salt and pepper over the chicken to taste.
- Cook: Cover the slow cooker and set it to low. Cook for 6 to 8 hours or until the chicken is tender and fully cooked.
- Shred the Chicken: Once cooked, take two forks and shred the chicken right in the sauce. This makes it super easy to serve!
- Serve: Dish the chicken over rice and sprinkle with chopped peanuts and fresh cilantro for garnish. Enjoy!
