  • Total Time: 495 minutes
  • Yield: 6 servings 1x
  • Diet: Gluten-Free

Description

A delicious and easy slow cooker dish featuring tender chicken thighs in a creamy peanut sauce.

Ingredients

Scale
  • 2 lbs chicken thighs
  • 1 cup peanut butter
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Mix the Sauce: In your slow cooker, combine the peanut butter, coconut milk, soy sauce, honey, lime juice, minced garlic, and grated ginger. Stir until everything is smooth and well-blended.
  2. Add the Chicken: Place the chicken thighs into the slow cooker, making sure each piece is well coated with the sauce.
  3. Season: Sprinkle some salt and pepper over the chicken to taste.
  4. Cook: Cover the slow cooker and set it to low. Cook for 6 to 8 hours or until the chicken is tender and fully cooked.
  5. Shred the Chicken: Once cooked, take two forks and shred the chicken right in the sauce. This makes it super easy to serve!
  6. Serve: Dish the chicken over rice and sprinkle with chopped peanuts and fresh cilantro for garnish. Enjoy!

Notes

Serve over rice for a complete meal and feel free to add toppings like lime wedges and extra chopped peanuts.
