- 1 lb chicken breasts
- 1 can white beans, drained and rinsed
- 1 can diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup heavy cream or coconut cream
- 2 cups spinach or kale
- Toppings: avocado, cilantro, sour cream
Instructions
- Sauté the aromatics: In a large pot, add a splash of oil and sauté the diced onion and minced garlic until fragrant, about 3-4 minutes.
- Cook the chicken: Toss the chicken breasts into the pot and cook until browned on both sides.
- Add flavorful ingredients: Stir in the diced green chilies, white beans, cumin, chili powder, salt, and pepper.
- Simmer away: Pour in the chicken broth and bring everything to a simmer for 15-20 minutes.
- Shred the chicken: Once thoroughly cooked, shred the chicken back into the pot.
- Incorporate cream and greens: Stir in the heavy cream and spinach or kale until the greens wilt.
- Serve hot: Ladle the chili into bowls and top with avocado, cilantro, and sour cream.
