Ingredients
6 rainbow carrots (orange, purple, yellow), peeled and shaved into ribbons
1 small cucumber, thinly sliced
2 green onions, finely sliced
2 tbsp toasted sesame seeds
1/4 cup fresh cilantro or parsley leaves
Dressing:
2 tbsp rice vinegar
1 tbsp soy sauce or tamari
1 tbsp toasted sesame oil
1 tbsp honey or maple syrup
1 tsp grated fresh ginger
1 small garlic clove, minced
Juice of 1/2 lime
Salt and pepper, to taste
Instructions
1. Using a vegetable peeler, shave carrots into thin ribbons and place in a large bowl.
2. Add cucumber slices, green onions, sesame seeds, and cilantro.
3. In a small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, lime juice, salt, and pepper.
4. Pour the dressing over the salad and toss gently to combine.
5. Let sit for 10–15 minutes before serving to allow the flavors to meld.
6. Garnish with extra sesame seeds or fresh herbs if desired.
Notes
Add sliced avocado or edamame for extra texture and protein.
For a spicy twist, mix in a dash of chili flakes or sriracha.
