Ingredients

- 2 scrambled eggs
- 1 ripe avocado
- 1 cup ground beef
- Salt and pepper to taste
- Cooking oil
- Optional toppings: cheese, salsa, or hot sauce
Instructions
- In a skillet, heat a small amount of cooking oil over medium heat. Cook the ground beef until fully browned, seasoning with salt and pepper.
- In a separate bowl, scramble the eggs and cook them in another heated skillet until set.
- Slice the avocado.
- To assemble, in a bowl, layer the cooked ground beef, scrambled eggs, and avocado slices.
- Add any optional toppings if desired, and serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to three days. The ground beef and scrambled eggs can be frozen for up to three months, but add fresh avocado when serving.
