Ingredients

2 lbs sweet potatoes, peeled and thinly sliced

2 tbsp butter

2 garlic cloves, minced

1 1/2 cups heavy cream (or half-and-half)

1/2 cup grated Parmesan cheese

1 cup shredded Gruyère or mozzarella cheese

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp nutmeg (optional)

Fresh thyme or rosemary for garnish


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a small saucepan, melt butter over medium heat.

3. Add minced garlic and cook until fragrant, about 1 minute.

4. Pour in heavy cream, salt, pepper, and nutmeg; heat gently until warm but not boiling.

5. Arrange half of the sweet potato slices in the prepared baking dish.

6. Pour half of the cream mixture over the potatoes and sprinkle with half the cheeses.

7. Repeat the layers with remaining sweet potatoes, cream, and cheese.

8. Cover with foil and bake for 35 minutes.

9. Remove foil and bake an additional 15–20 minutes until golden and bubbly.

10. Let cool for 10 minutes before serving, then garnish with fresh herbs.

Notes

For extra flavor, add caramelized onions or crispy bacon between layers.

Use coconut milk instead of cream for a dairy-free version.
