This Savory Roasted Cranberry and Goat Cheese Flatbread is the perfect mix of sweet, tart, and creamy. With roasted cranberries, caramelized onions, and a touch of honey, it’s a festive showstopper for any occasion.
Ingredients
1 prepared pizza dough or flatbread crust
1 1/2 cups fresh cranberries
1 tbsp olive oil
1 tbsp honey or maple syrup
1 small red onion, thinly sliced
1 tbsp butter
4 oz goat cheese, crumbled
1 cup shredded mozzarella cheese
1 tsp fresh thyme leaves
Salt and pepper to taste
Balsamic glaze, for drizzling (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Toss cranberries with olive oil, honey, salt, and pepper. Spread on the sheet and roast for 10–12 minutes until softened and caramelized.
3. Meanwhile, heat butter in a skillet over medium heat and sauté onions until golden and caramelized, about 10 minutes.
4. Roll out pizza dough or place flatbread on a baking sheet.
5. Top with mozzarella, caramelized onions, roasted cranberries, and goat cheese crumbles.
6. Sprinkle with thyme and bake 12–15 minutes until cheese is melted and crust is crisp.
7. Drizzle with balsamic glaze before serving.
Notes
Add prosciutto or crispy bacon for a meaty twist.
Use naan or pita for individual mini flatbreads.
