Description

An elegant twist on classic macarons these stunning savory beet macarons feature earthy beet-infused shells filled with tangy whipped goat cheese and a hint of walnut crunch for a sophisticated appetizer or holiday bite.


Ingredients

1 1/2 cups powdered sugar

1 cup almond flour

1 tbsp beet powder (or 2 tbsp finely pureed roasted beets)

3 large egg whites, room temperature

1/4 cup granulated sugar

1/4 tsp cream of tartar

Pinch of salt

For the filling:

4 oz goat cheese, softened

2 oz cream cheese, softened

1 tbsp honey

1 tbsp heavy cream

1/4 cup finely chopped toasted walnuts

Fresh thyme or chives, for garnish (optional)


Instructions

1. Line two baking sheets with parchment paper and set aside.

2. In a food processor, pulse powdered sugar, almond flour, and beet powder until fine. Sift mixture to remove any lumps.

3. In a clean bowl, beat egg whites with cream of tartar and salt until foamy. Gradually add granulated sugar and beat to stiff, glossy peaks.

4. Fold dry ingredients gently into the meringue in batches until batter flows like lava and forms ribbons when lifted.

5. Transfer to a piping bag fitted with a round tip and pipe 1-inch circles onto baking sheets.

6. Tap trays firmly on the counter to release air bubbles. Let rest 30–40 minutes until tops are dry to the touch.

7. Preheat oven to 300°F (150°C). Bake 14–16 minutes, rotating halfway through. Cool completely before filling.

8. For the filling, beat together goat cheese, cream cheese, honey, and cream until smooth and fluffy. Stir in toasted walnuts.

9. Pipe filling onto one macaron shell and sandwich with another.

10. Refrigerate at least 1 hour before serving to allow flavors to meld.

Notes

Store in the refrigerator up to 3 days; bring to room temperature before serving.

For a deeper color, add an extra 1/2 tsp beet powder.
