Description

These Grilled Veggie Mozzarella Sandwiches are a warm, melty delight featuring smoky grilled vegetables, creamy mozzarella, and a hint of pesto on toasted artisan bread. Perfect for lunch or a light dinner!


Ingredients

1 small zucchini, sliced lengthwise

1 small eggplant, sliced into rounds

1 red bell pepper, cut into strips

1 tbsp olive oil

Salt and pepper, to taste

4 slices of artisan or sourdough bread

4 oz fresh mozzarella, sliced

2 tbsp pesto

1 tbsp balsamic glaze (optional)

Butter for grilling


Instructions

1. Preheat a grill pan or outdoor grill to medium-high heat.

2. Brush zucchini, eggplant, and red bell pepper with olive oil and season with salt and pepper.

3. Grill vegetables for 3–4 minutes per side, until tender and lightly charred.

4. Spread pesto on one side of each bread slice.

5. Layer grilled veggies and mozzarella on two slices of bread, then top with remaining slices.

6. Butter the outer sides of each sandwich.

7. Grill sandwiches on a pan or press for 2–3 minutes per side until bread is golden and cheese is melted.

8. Drizzle with balsamic glaze if desired and serve warm.

Notes

You can use any combination of veggies like mushrooms, onions, or spinach.

Try adding a slice of tomato or a few fresh basil leaves for extra freshness.
