Ingredients

1 lb salmon fillet, skin removed and cut into chunks

1 tbsp olive oil

1 tbsp butter

1 small onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 carrot, diced

2 cups corn kernels (fresh or frozen)

3 cups chicken or seafood broth

1 cup heavy cream

1/2 tsp smoked paprika

1/4 tsp dried thyme

Salt and pepper, to taste

1 tbsp lemon juice

2 tbsp chopped fresh dill or parsley


Instructions

1. Heat olive oil and butter in a large pot over medium heat.

2. Add onion, garlic, carrot, and potatoes. Cook 5–6 minutes until softened.

3. Stir in smoked paprika, thyme, salt, and pepper.

4. Pour in broth and bring to a simmer. Cook for 10–12 minutes until potatoes are tender.

5. Add salmon pieces and corn. Simmer gently for 5–7 minutes until salmon is cooked through.

6. Reduce heat to low and stir in heavy cream and lemon juice. Warm through without boiling.

7. Adjust seasoning and garnish with dill or parsley before serving.

Notes

Use coconut milk instead of cream for a dairy-free version.

Add bacon at the start for a smoky twist.

This chowder thickens as it cools — add a splash of broth to reheat leftovers.
